When we are not shoveling, we have been cooking and trying out new recipes from Ashton’s awesome recipe books given to him from Grandma Dixie.
Chana Masala: We learned that “Masala” means “blend” in Indian cooking. Verdict- very tasty! Served over rice and with pita bread. The meal is actually vegetarian with chickpeas as protein. We added chicken as well. Both boys said that it would be best without chickpeas and more chicken. Ha! The flavors of the leftovers were even better the second day.
One-pot pasta with peas and sausage:
Verdict- nice meal on a cold day. Zach said that it tasted like beef stroganoff light with Italian sausage. He was spot on. Ashton, who is not a fan of peas, said that he would prefer broccoli next time. I liked the added flavor of the lemon zest in the sauce.

Crumb cake: Delicious! Derek said that it was a bit dry. It was baked at 325F and took much longer than the recipe indicated. Modifications for next time- cook at a higher temperature? Decrease the crumble topping by half. The topping is great- just a bit too much!

Chicken Tinga Tacos: Excellent! Delicious chipotle sauce with other spices. Flavorful but not too spicy. The recipe called for chicken thighs but we only had breast. Definitely would be better with chicken thighs or pork roast. Would be excellent to make in the slow cooker.

Snickers has enjoyed playing outside in the snow with her boys (they dug her a trench do that she could more easily get around). Followed by snuggling in her nest of course!!!
