Unplugged!

So we have finally had a weekend with no obligations. No visitors. No band concerts. No gym classes. No tennis tournaments or major swim events. No holidays. While we LOVE those things, it has been awesome to just have a weekend to relax and recharge. 

That does not mean that we were boring. Oh no not at all! It just meant we have spent time enjoying each other and food, which is what we do best!!! 

At Derek’s request, I prepped meat and veggies with Grandma Peggy’s famous beer marinade (thank you to Grandpa Cliff who posthumously donated a Coors beer for the event!).  So yummy! The boys inhaled their plates full of grilled marinated beef, veggies, rice, and corn on the cob. 







Dixie’s friend Jeannie visited family near Albuquerque, NM and was kind enough to go on a beer run for us to our favorite Sierra Blanca Brewing Company. She brought us back a case each of my favorite Pecan Beer and Derek’s fav Outlaw Lager. Such a great treat!!!?



Later in the afternoon, Ashton requested that we make another Princess Cruise favorite mocktail, “Strawberries on Fire”. With a little ingenuity using frozen strawberries, pickled jalapeƱos, and Vernors ginger ale, we created something pretty close. 

Derek and I created our own fully-loaded version with Ancho Reyes liqueur in place of the jalapeƱos!!

It was nice and warm- so very easy to fall asleep outside listening to the birds under the overcast sky. 

Last night we convened about 7pm to watch “Spider-Man No Way Home”. Excellent movie! Exactly what we needed on a Saturday night! 

Snyx was there too looking for popcorn handouts. 

This morning we enjoyed a family breakfast of waffles and bacon with strawberry topping for the waffles (Derek’s favorite!). He and I then went out on a mountain bike “date” for an eight mile ride out and back from our house into Skunk Canyon! 



After our ride, we trimmed some limbs from the tree in our front yard. 

Then we enjoyed a post ride brew! 

Mid-afternoon I tried a new copycat Pasta Y Fagioli recipe (soup from Olive Garden) served with homemade bread. Excellent! Hit the spot!
