Soothing soup and spinning Ashton!

He’s so weird and cute! (Just like his brother and parents!!!!)

We are glad that he is feeling better and mostly back to normal! Ash started to develop mild cold symptoms last Sunday (sore throat, cough, sneezing). The kids had last Monday off. We hoped it would be a short stint and that he would be fine by Tuesday. However, due to the persistence of symptoms, even though they were mild, we ended keeping him home through Thursday until his symptoms subsided. He was great about contacting his teachers and doing school work from home. He was so happy to go back to school on Friday. Seriously he was happy to not stay home…again! Meanwhile, the rest of us have been feeling fine. Yay! Knock on wood it stays that way. We have been isolating from both Ashton and the rest of the world as much as possible and definitely masking when we go out just in case. So you ask, did Ash have Covid? Well there were no rapid tests to be found in Flag unless you wanted to pay over $100 and the backlog of lab testing for the non-rapid tests would have taken so long to get the results due to the high amount of cases, we just had to assume Covid and take precautions. Either way, we are keeping to ourselves as much as possible through this weekend so as not to spread anything to others.

Today I made Zuppa Toscana at Derek’s request. It is an Italian soup made popular by Olive Garden featuring Italian sausage, bacon, potatoes, and cream. Total yum! Another recipe that is a “keeper”! (And yes,  Ashton made me wear his chef’s hat when he offered to take my picture).

2022 has been a bit rough so far (yippee skippee!!!). My friend Autumn sends the best care packages. These socks arrived in the mail yesterday. They were perfect for a snowy Saturday! I went out for a run this morning and with the big, fluffy flakes it was like being in a snow globe. So pretty!

Chef Derek snd I made peanut brittle this afternoon! Yum!
